Chef Silvester adds flare to the hotel's distinctly local food & beverage program.
The Fairmont Mayakoba, welcomes Chef Richard Silvester to its outstanding culinary team. With 21 years of professional culinary experience in the kitchens of prestigious hotels around the world, Chef Silvester is injecting his own delicious style into the hotel's distinctly local food & beverage program, including their new Lifestyle Cuisine Plus, featuring options for travelers with dietary restrictions.
"It's no secret that eating is one of the most powerful, essential experiences and that the outcome of good honest food plays with our senses and overall well being," said Chef Silvester. "This amazing destination has sparked a certain appreciation with its deep traditions. With this flavor in mind, I look forward to enhancing guests' dining experience at Fairmont Mayakoba."
In late January, this Riviera Maya luxury hotel began offering Lifestyle Cuisine Plus, a new menu available upon request catering to guests with specific diet-dependent conditions, such as diabetes, heart disease and gluten free needs, as well as unique dietary preferences including, macrobiotic, raw and vegan diets. Chef Silvester underwent extensive training to prepare a vast array of special dietary and allergy-specific meals and is now equipped with Nutritionist Pro™ by Axxya Systems (www.axxya.com), cutting-edge recipe analysis software to help customize entrees and menus to fit with guests' requests. Utilizing nutrient-rich ingredients, clean cooking methods and local food products, diners at Fairmont's Riviera Maya restaurants can be sure their dishes are wholesome, balanced and full of taste.
Chef Silvester's appreciation for the rich environment surrounding Fairmont Mayakoba will be augmented by the use of local, organic and sustainable items wherever possible. Sustainable seafood choices abound on each menu, often purchased from the nearby Sian Ka'an community when in season. Organic local herbs and other vegetables grown in the Chef's Garden on the property pack powerful flavor into each dish, such as Silvester's Mayakoba-style Crab Tostadas.
